Maybe because it matched the American Idiot artwork, but then why did they choose red, black and white for that? Maybe he's just a massive White Stripes fan...

I wasn't aware that White Stripes invented red and black.

I remember in an interview sometime that Billie said they chose red, white and black because they wanted the artwork to be simple and drastic, kind of like a propaganda poster of some sort. The design is very well done. I can't remember what interview it was.

There is no "Green Day" unless you're talking about some Japanese holiday. It's a name for a day spent smoking marijuana. So, yes, if you spend all of December twelfth getting stoned it is a green day.
