I'd say Grand Theft Auto III. What it did for the gaming industry is comparable to Mario and Pacman. It took it to a whole new level, forced other game developers to up their game. No one can disagree what Sandbox gameplay did to gaming.

FF7 completely changed the RPG game, and you have to admit, those CGI scenes for badass for a PS1 game (or any game).

I really enjoy the Splinter Cell games. I like how you can't just run though shooting people. You actually have to think and use strategy. The lighting is cool too.
Me, my brother, and my cousin had so much fun playing Twisted Metal when we were little. I love it just for the nostalgia even though it's not the best haha.
